Tomme means smallish, rounded cheese and is usually combined with the region or town of origin. In this case, a raw cow’s milk cheese from the mountainous region of Savoie near the Rhone Alpes. It has been lightly presses and aged for 2-4 months made from the full-fat milk left over from butter making. It radiates rustic, earthiness and mushroom flavours closer to the rind, some tang along with wet-straw and vegetal notes and sometimes even dried fruits depending on grazing conditions.
