A vegetable ash sprinkled rind hides a whitish paste, which is more compact and dense texture towards the center and a very creamy fluid and soft consistency just below the crust. It has pronounced aromas of goat, and delectable notes of undergrowth. A wonderfully spongy mouthfeel with classes cheese acidity and mineral quality. As summer progresses the texture becomes richer and more buttery, while the flavours develop a clean & fresh, milky sweetness.
