A double-cream cow’s milk cheese that is matured for six weeks. During this time the cheese develops a lovely bloomy rind, which encases a moussey, buttery, slightly tart, mushroom and nutty paste. The cheese tends to have very minimal salting in order to allow the rich and creamy flavours to thrive alongside a lactic freshness.
