A traditional clothbound cheddar, made with unpasteurised milk and aged for 15 months in their hillside cellar. After maturing the cheeses are smoked over beech wood for 48 hours. The smoking creates a highly aromatic and smokey flavour with amazing coffee and caramel notes that run deep into the cheese, creating whole new levels of complexity.
