Three different batches of drained curd are matured over several days and folded together. This process produces a cheese with unparalleled acidity, giving an extraordinary structure and length to its incredible flavour. Unlike many goat cheeses Petit Blaja can be aged for over 3 months, with the rinds changing from pastel yellow, through orangey reds, to browns and blacks. Each stage of development merits tasting - To begin they are light and fluffy, with a tart and citric, floral center, with a buttery and creamy breakdown around the edges developing into deep animal notes. MEGA! Produced from March - November. Get one while you can!
