Persille de Beaujolais is a semi soft blue cheese with a dense and supple paste, in which, streaked (or parsleyed as the name means literally) with blue creates a subtle caramelising effect. The cheese emerged from a friendship between the Lapierre family and their Italian Gorgonzola producers, a maverick break from tradition in the Fourme de Montbrison area.
