A lactic-set, hand-ladled cheese from the milk of a herd of the ancient Provencal breed of 70 Rove goats. The cheese is highly prized, rich, and creamy with a feather-soft texture. Intentionally light on salt, allowing more perfumed, honey flavours of the Rove milk to shine through, with a slight tannin from the chestnut leaf.
