Selected from a small series of producers in the Jura mountains, bordering France in the west of Switzerland. Making only twenty cheeses a day the producers make a particularly fine, moist, pronounced paste. A hard, rich, nutty cheese aged for 23 months allowing more development of flavour while maintaining it’s smooth texture.
