A creamy cows milk cheese made from whole milk plus a little extra cream. Matured for 2-3 weeks, its flavours are soft and rich, lactic and creamy when young, developing walnut and mushroom flavours as it matures. One of Britain’s first double-cream cheeses, made with milk from Friesian and Jersey cows. Named after Charlies dog and suitably means “Great White One” in Irish.
