A vibrant orange, unmistakably odorous, boldly flavoured cheese, that is washed and sometimes marinated in marc (super strong eau-de-vies distilled from grape skins, pulp and seeds) or white burgundy. This creates a sticky, rich and meaty pungency, developing peanut flavours and becoming more intense with hints of marmite and smoky bacon and it ages. A truly rich and sumptuous cheese with complex flavours that won’t be soon forgotten.
