Nettles! The leaves are brushed onto the cheese in concentric circles, which attracts naturally occurring molds. As the cheese matures the edible wrap creates a delicate mushroom taste and very unique appearance. Fresh and creamy with a lovely buttery breakdown and crumbly core, notes of lemon and yoghurt.
