The first co-operatively made cheese, Farmers banded together (fruitières) in order to make wheels of cheese big enough to keep for long periods, as many only owned one or two cows. Nowadays co-ops continue the tradition with the French Jura dotted with hundreds of fruitières dairies. Comté is a hard mountain cheese, lightly crystalline in texture with a caramel buttery quality that evolves into a rich hazelnut flavour.
