A young Mimolette, aged for only 4 months. A beautifully coloured semi-circle cheese that’s rind goes from bright orange to grey depending on it’s maturation stage. It’s cavy on the nose, buttery on the palate with hints of hazelnut. A very delicate and comforting cheese to be enjoyed on it’s own or with an Amber or Red Ale.
