Unique and beautiful, this 2 month aged buffalo milk cheese is distinctive and full-bodied. It’s flavour is a balance of sweetness and spice with a slight tang and a lingering finish. The rich, sweet flavour of the buffalo milk cuts beautifully through the astringency of the blue mold, making for a balanced, fudgy blue that is mildly gamey.
