Made from the milk of two herds of local Abondance & Tarentaise cattle. Claude produces his own starter cultures and rennet, this on top of some exceptionally rich local milk allows Beaufort to retain such a unique and beautifully complex flavour. The cousin to Comté, Beaufort has notes of orange zest, grass, apricot, brioche, hazelnut and warm spices.
